Documentation-only update to docs/comfy-gallery-extraction-checklist.md: records the feb1ec1 install-jobs deploy (issue #4), the comfy_gallery.image digest pin bump in eef664d, and the stale-checkout deploy regression caught and fixed during the same session. Supersedes bugsy/comfy-gallery-issue-4-ack, which was mistakenly authored under Codes's Bugsy identity instead of Nimby's.

Record comfy-gallery issue #4 deploy in extraction checklist 6e28d9d7f3

Documents the feb1ec1 install-jobs deploy, the digest pin bump in
eef664d, and the stale-checkout deploy regression that was caught and
fixed during the same session (deploying from a homelab checkout 107
commits behind origin/main briefly reverted aibench to the pre-cutover
local-build role, corrected by redeploying from current main).
